Wow, That Was Fast!
The speed of a restaurant is key to its success. If they take forever to get food out, some part of the food is bound to be cold. Cold food will always keep customers from becoming your next great “regular.” If food comes out quick and still hot, customers will be happy. This may seem basic, but many restaurants look it over. The restaurant manager is responsible for the tempo of the entire establishment. It is his or her job to see that everything comes together properly and the food is delivered to the table before the food’s quality fades. Customers pay more attention than we give them credit for. If you have an open kitchen they will usually be able to spot their food sitting under the heat lamps waiting for it to be delivered to them.
